Made about five dozen hamentaschen last night, half of them vegan. They're baking up a little weirder than I'm used to-- even the non-vegan ones don't have as good a texture as the ones I've made in the past. It might be the ingredients, since I'm using pareve margarine, and the only orange juice in the house has pulp in it, or it might be something else. I'm making at least as many more as I've already made, so I've got time to fiddle with the recipe. Which I think I've posted before, but just in case:

3/4 cup sugar
2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter or margarine (Crisco if you want 'em parve)
1 egg
2 T orange juice
Filling of choice-- poppyseed, prune, apricot, apple, blueberry or cherry pie filling, chocolate ganache, Nutella

Mix sugar, flour, BP, salt in bowl; work in softened (NOT melted) butter
separate bowl-- mix egg and OJ, then add to rest of ingredients; mix until it's dough. Dough should NOT be crumbly; keep kneading until it holds together well, and add a little OJ if it's too dry.

Refrigerate 1 hour.

Roll out, cut into circles-- use a cookie cutter or a large drinking glass for this. Place large spoonful of filling in center of each circle, and pinch dough into a triangle around it. Be SURE the corners are sealed up well, or they WILL fall apart in the oven.

Bake at 400 degrees Fahrenheit for 10-12 minutes. They should be the tiniest bit golden brown around the edges-- any more than that, and the bottoms of the cookies will get scorched.
